Ricetta Saltimbocca. Remove the saltimbocca from the pan, leaving behind the juices, and place into a serving dish. Heat a tablespoon of oil in a frying pan and fry for two minutes on each side until coloured and crispy.
Mix butter and flour together to make a paste. Taste and add salt and pepper to your taste. Heat a few tablespoons of oil in a large skillet over medium-high.
Pin the three layers together using a toothpick.
Add the stock and bring to a boil.
Arrange a slice of Culatello di Zibello PDO on top of each slice of veal followed by the sage. Add more water if it reduces too quickly. Prepare a sheet of plastic wrap on a working surface, distribute veal cutlets, and cover with plastic wrap.
